Summer Self-care Series: Nutritious and Flavorful Recipes for Busy Educators

Welcome back to our Summer Self-care Series! Last week, we focused on starting your day with invigorating exercises to boost your energy and mood. This week, we’re turning our attention to healthy eating habits. Summer is the perfect time to reset your body and implement practices that support a healthier lifestyle. Eating well doesn’t have to be complicated or time-consuming. Here are two original, delicious, and easy-to-make recipes from our sister brand Cooking with Tiffany’s Deliciously Social to get you started.
Citrus and Spice Grilled Salmon with Mango Lime Sauce
Ingredients:
4 salmon fillets
2 tbsp olive oil
2 tbsp Tiffany’s Sweet Citrus and Spice and All That's Nice Seasoning
1 mango, peeled and chopped
1/4 cup plain Greek yogurt
Juice of 1 lime
1 tsp honey
Salt and pepper to taste
Fresh cilantro for garnish
Instructions:
Rub the salmon fillets with olive oil and sprinkle generously with Tiffany’s Sweet Citrus and Spice and All That's Nice Seasoning.
Preheat your grill to medium-high heat.
Grill the salmon for 4-6 minutes per side, or until the salmon is cooked through and has nice grill marks.
In a blender, combine the mango, Greek yogurt, lime juice, honey, salt, and pepper. Blend until smooth.
Serve the grilled salmon topped with mango lime sauce and garnish with fresh cilantro.
Tropical Spinach Salad
Ingredients:
4 cups fresh spinach
1 cup fresh pineapple chunks
1/2 cup sliced strawberries
1/2 red bell pepper, thinly sliced
1/4 red onion, thinly sliced
1/4 cup toasted coconut flakes
1/4 cup fresh cilantro, chopped
Dressing:
3 tbsp olive oil
2 tbsp lime juice
1 tbsp honey
Salt and pepper to taste
Instructions:
In a large bowl, combine the spinach, pineapple, strawberries, red bell pepper, red onion, coconut flakes, and cilantro.
In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
Drizzle the dressing over the salad and toss to combine.
Servings and Nutritional Information
This recipe serves about 4 people, with one serving being about 468 calories. It's a perfect balance of flavors and nutrients, making it an excellent choice for a healthy and satisfying meal.
